Shake up for quality canned foods

February 23: A race is on to bring revolutionary higher-quality canned foods to consumers before the end of the year – perhaps even this summer – with the commercial launch of the Shaka processing system.

US-based Allpax Products is the third equipment manufacturer to take up a licence for the British-developed technique in which modified retorts shake the containers to improve heat transfer.

While time savings of up to 90 percent are claimed for the Shaka process, it is the better quality – colour, texture and flavour – of products such as soups, sauces and vegetables that has driven interest, says John Emanuel, chairman of London-based Utek Europe, which is promoting it.
